  • 1 store-bought pie crust or pastry dough (brought to room temperature)

  • 1 lb fresh strawberries, hulled and sliced

  • ¼ cup granulated sugar

  • 1 tbsp fresh lemon juice

  • 1 tbsp lemon zest

  • 1 tbsp unsalted butter, melted


For the Crust Finish (Optional)

  • 1 large egg (beaten with 1 tbsp water or milk for the egg wash)

  • 1 tbsp coarse sugar (for sprinkling, optional)


For Serving

  • 1 cup whipped cream

  • 4–6 fresh mint leaves

Instructions

1. Prepare the Strawberry Filling

In a medium bowl, gently toss the sliced fresh strawberries, granulated sugar, lemon juice, and lemon zest together. Allow the mixture to macerate at room temperature for 10 minutes. The berries will release their natural juices and smell beautifully bright and sweet.


2. Assemble the Galette

Preheat your oven to 375°F (190°C). Roll out a large sheet of parchment paper on your counter and place the pastry dough directly on top. Use a slotted spoon to transfer the strawberries into the center of the dough, leaving a clean 2-inch border around the edges. Drizzle the 1 tablespoon of melted butter over the berries. Arrange the fruit in a relatively even layer to ensure uniform baking.


3. Fold and Shape the Crust

Gently fold the edges of the dough inward toward the fruit, overlapping the pastry to create natural, rustic pleats. Do not worry about making it look perfect - the rustic finish is part of the charm. If the dough cracks while folding, lightly dampen your fingers with lukewarm water and gently press the cracks together to seal them.


4. Apply the Egg Wash

In a small bowl, whisk the egg with a splash of water or milk. Lightly brush the folded edges of the pastry crust with the egg wash to ensure a shiny, deeply golden finish. Sprinkle the crust generously with coarse sugar if desired. Slide the parchment paper with the galette directly onto a large baking sheet.


5. Bake to Perfection

Bake for 35–45 minutes, or until the pastry crust turns deeply golden-brown and the strawberry filling bubbles softly in the center.


6. Cool and Serve

Remove from the oven and let the galette cool on the baking sheet for at least 15 minutes before slicing. (Baker’s confession: If you rush this step, your whipped cream will melt completely into the fruit - just like mine did in the photograph!) Serve while still slightly warm, topped with a generous dollop of whipped cream and a few fresh mint leaves.
